Orecchiette, there is little to say about orecchiette from Bari, well-known and well-loved all over the world and that now represent the foundations of Apulian gastronomic culture and emulate the ancient tradition of pasta « strascinata » or pulled by the thumb on the pastry board. The typical regional recipe pairs them with turnip tops, while in Salento, they are commonly enjoyed with tomatoes.
